How To Prepare Oha (Ora) Soup
Summary
Oha(ora) soup is a native to the south Eastern Nigeria. Its a traditional soup similar to bitterleaf soup when prepared with cocoa yam but cooked with oha leaves.
Ingredients
- Oha leaves (2 handful)
- Cocoa yam (thickener) or 5 tablespoon of grinded achi.
- Goat meat, cow meat or chicken
- Ogiri
- Smoked cat fish
- Ground crayfish
- 1 big stockfish head
- 30cl of palm oil
- Salt
- Seasoning cubes
Preparation
- Wash the cocoa yam properly, boil it with enough water till it is soft. Peel the back with a knife and pound the cocoa yam until it is smooth. You can either buy grinded achi at the market for alternative thickener.
- Wash the stockfish and smoked cat fish with water and salt. Then soak them in hot water in a different plates.
- Remove the oha leaves from the stem and shred the leaves with your hand.
- Boil the meats with curry, thyme, seasoning cubes and salt for about 20 mins. Add the stock fish and cat fish and allow to boil for another 10 mins.
- Add palm oil, cray fish, ogiri, salt (for taste) seasoning cubes and dry Pepper. Mix properly and allow to boil for another 8 mins
- Then add the thickener, mix properly and allow the thickener to dissolve in the soup. Then allow to boil for like 5 mins.
- Then add the oha leaves. Allow to boil for another 2 mins.
- Your oha soup is ready and can be served with Eba, Fufu, Semovita etc.
