How To Prepare Egusi Soup

Summary

The egusi soup is one of the most traditional soup in Nigeria. It is native to the igbos of Eastern Nigeria.

INGREDIENTS:
  • 4 milk cups of grinded egusi
  • Vegetables: Bitter leaf, uguw. Any other vegetable leaf can go 
  • Assorted beef: Cow meat, kpomo, goat meat
  • Assorted fish: Dry fish, stock fish, fresh fish
  • Traditional seasoning: Iru or Ogiri
  • Palm oil
  • 1 medium sliced onions
  • Cray fish (grounded)
  • Salt, seasoning cubes, blended pepper
STEP 1
Boil the meat and season with curry, thyme, onions, seasoning cubes and salt. Wash the stock fish and pour it inside hot water and set it aside.

STEP 2
Put dry pot on fire and pour the palm oil to heat it up for like 30 seconds. Pour the blended pepper, the sliced onions and the grounded melon (egusi) and stir. You must not leave it to prevent it from burning, so you must continue to stir until the egusi blends well with the oil and pepper.

STEP 3
Pour the meat, and fish stock into the pot containing the egusi, and add your cray fish, seasoning cubes, kpomo, salt and stir.

STEP 4
Pour the sliced uguw leaves or bitter leaf and mix properly.

Note: For bitter leaf, you don't turn it, you place it inside the pot and cover the pot. This is done to prevent the soup from becoming bitter if the bitter leaf is not washed well. But for uguw leave, don't cover the pot just put it inside the pot and stir.


STEP 5
Your egusi soup is ready and can be eaten with any swallow.
